Stuffed Cob Loaf
1 potato cob loaf cut the top off and remove the middle of the loaf, so like hollow the thing out ….
6 finely chopped silverbeet leaves (stalks removed)
1 finely chopped onion
1 cup mayonnnaise
1 1/2 cups grated tasty cheese
250g cream cheese
1 teaspoon curry powder
Mix all of the ingredients together and place in the inside of the hollowed out cob loaf. Bake at 180 C for 3/4 hour with the ‘lid’ of the cob loaf on. Then 15 mins with the lid off.
Eat with a sliced, toasted french stick. You can lightly drizzle olive oil on these and a bit of chicken salt before toasting. Then dip them in the cob and scoff to your hearts content.
Goes great with beer and wine and a great party feast. We had 3 and they all disappeared

I love this- my best friend makes a version with water chestnuts and my son’s grandmother makes a version with pineapple. Nom nom nom!
