Every year at Xmas we get together as a family, not all of us, just those that can make it. My mother never fails to fill our tummies with her mouth watering cheesecake.
Ima gonna share because it is freekin moorish and really easy to make. I made one today …
Pineapple Cheesecake
(Normally if you are feeding lots of people make a double mixture)
2 cups plain biscuit crumbs
110 grams melted butter
Mix together and pop into a spring form tin or a tray whatever tickles your fancy
1tbsp gelatine 1/4 cup hot water
1 tsp vanilla 1 425gram tin crushed pineapple
(drain juice and fill 1/4 cup)
1 1/4 cups whipped cream unsweetened
375 grams cream cheese
1/2 cup white sugar
1/4 cup lemon juice
Dissolve gelatine in 1/4 cup hot water (whisk).
Beat cheese until smooth, gradually add sugar, dissolved gelatine, vanilla, lemon juice + pineapple juice. Mix well.
Fold cream and pineapple into cream cheese mixture.
Pour onto crust and set in the fridge. Takes about an hour to set.
Much easier if you have a food processor to make this.
